Zucchini chips with tzatziki - a healthy snack from the Blue Zone Ikaria

This summer we had a rich zucchini harvest on Ikaria. Anyone who knows the island knows that everything grows in harmony with nature - sun-kissed, unhurried and of the highest quality. But what do you do when the zucchini comes out of the garden in abundance? My daughter-in-law had a delicious idea: crispy zucchini chips with creamy tzatziki !

A snack that is not only simple and delicious, but also offers a healthy alternative to conventional chips. Gently baked, not fried, and refined with aromatic oregano.





Ingredients for the zucchini chips:

   

                 

  • 1 medium-sized zucchini

  • 2 tablespoons olive oil

  • 1 tsp Leander's wild oregano 🌿

  • ½ teaspoon sea salt

  • ½ teaspoon sweet paprika


Ingredients for the Tzatziki:


  • 500 g Greek yogurt

  • 1 small cucumber, finely grated

  • 3 garlic cloves, pressed

  • 1 tablespoon olive oil

  • ½ teaspoon salt

  • ½ teaspoon pepper
