Soufiko with Rice – The Soul of Icarian Cuisine

Today we would like to introduce you to one of the most authentic dishes of our homeland: Soufiko . This traditional stew is a true symbol of the simple, natural and yet incredibly tasty cuisine of Ikaria. This recipe is for 3 people :



Ingredients:


  • 1 medium-sized eggplant

  • 1 zucchini

  • 1 bell pepper

  • 2 ripe tomatoes

  • 1 large onion

  • 5 tbsp Avramidis olive oil 100 years

  • 3 cloves of garlic, finely chopped

  • salt, pepper and some oregano

  • some fresh parsley and dill

  • 300g rice





Soufiko is not just a dish, but an expression of the way of life on our island: fresh, seasonal and with ingredients that come directly from nature. It combines different vegetables that are slowly cooked in a pan until all the flavors combine to form a harmonious whole - just like the philosophy of Slow Food that is lived in Ikaria.
