Superfood e.g. in the evening!

Today we were able to harvest fresh beetroot from our garden for the first time. Of course, I prepared it the Icarian way.
I peeled them and cooked them together with the leaves. Then I added salt and pepper. A little feta cheese, lemon and of course the wonderful olive oil from our garden make the whole thing a delicious and super healthy meal. Because beetroot provides vitamins A, C, B and folic acid. ...
But that's not all: beetroot contains betaine, which lowers the risk factor homocysteine for heart disease, anthocyanins, which have a cancer-protective effect, and nitrate, which lowers blood pressure, among other things. All these substances make beetroot a real miracle tuber
